Protein Pancakes
Makes 2-4 pancakes
Total Mixture – Carbs – 30g Protein – 74g Fat – 16g
50g (1/2 cup) Oats (Blended works better)
4 Whole Eggs
100g (1 cup) Egg Whites
1 Scoop Whey Protein
1 tsp Coconut Oil
Crack the eggs into a 1 litre jug, add the egg whites and mix
o Add the oats and Whey Protein and mix
o Place a frying pan on a medium heat and add the coconut oil
o When the coconut oil has melted add approx. ¼ of the mixture and tilt the frying pan to spread the mixture evenly across the pan
o Use a spatula (Silicone ones work great for this) to prise the semi-cooked mixture off the pan. Do this until the whole pancake moves freely around the pan
o Flip the pancake onto its opposite side
o Pre-heat a plate in the microwave for 1 minute
o Put the cooked pancake onto the plate and ideally cover it to retain heat and moisture
o Repeat this process until the mixture is used up
o Add whatever topping you like, of course this will add to the overall calories and macros. I like to use Nutella, greek yoghurt and jam. Cottage cheese with hot sauce works well
