Easy Sweet Potato Wedges
As many sweet potatoes as you want to eat
2 tbsp Olive Oil (possibly more depending on amount of sweet potatoes)
1 tbsp Balsamic Vinegar
Herbs and spices (I use Basil, Oregano, Parsley, Paprika, Jerk Seasoning, Hot chilli Powder, Ginger and Chilli Flakes)
Mix the olive oil, balsamic vinegar and whichever herbs and spices you want to use in a bowl
Chop the sweet potatoes into wedges (the thinner they are, the quicker they’ll cook)
Add the chopped sweet potatoes to the oil/herb mixture and roll around until they’re evenly covered
Put the wedges on a baking tray making sure to spread evenly for even cooking – no need to put oil on the tray as they’re already covered
Cook for 15 mins on gas mark 7, turn the wedges and cook for a further 10-15 minutes
Serve and eat
